Last night, in mental preparation for this week's Superbowl, I decided to attempt my own Onion Dip. It's pretty much the most ideal and classic dip for watching a game with, so I figured why not try it out before the big game day. Justin was immediately happy because I'm pretty sure he'd eat anything if it were smothered in Onion Dip....this recipe is easy, and makes a fairly large portion of dip, perfect for your hungry Superbowlers :) I also substituted low fat options instead of the full fat versions of certain ingredients to make it less caloric and I served it with Baked Lays Potato Chips (which are way healthier than the regular fried chips).
Superbowl Onion Dip
3 tbsp Butter3 small/medium Yellow Onions
1 tsp Thyme
1 tbsp Chicken Broth
1/4 Cup Fat Free Milk
1/4 Cup Light Mayo
1/4 Cup (2 oz.) Cream Cheese
1/2 Cup Light Sour Cream
1 tbsp Red Wine Vinegar
Chipotle Pepper
Baked Lays Potato Chips
>Chop up your 3 onions so they're cut in strips
>In a pot or dutch oven, add your butter, thyme and onions, and mix well. On a low/medium heat, cook onions for about an hour (stir every 5 minutes or so to make sure they're not burning). After an hour, you'll have melty caramelized amazing onions as the base of your dip. Before removing from the heat, deglaze your pot with the 1 tbsp of chicken stock (this will loosen up all the wonderful flavors that are stuck to the sides/bottom of your pot). Once that's done, remove from heat and let cool in a separate bowl.
>In a Cuisinart, add you onions, milk, mayo, sour cream, cream cheese, and red wine vinegar. Pulse until the mixture is completely smooth.
>Transfer the mixture to a serving bowl and serve with your favorite chips! I also sprinkled Chipotle Pepper on the top just to give it a little color and kick!
This is the kind of snack you can't walk away from!
With this being my first dish that will be served on Superbowl, let it be said that the GIANTS must win this Sunday! :)
