Chicken Burritas


Last night's dinner was an impromptu idea inspired by the need to use up a red bell pepper I had before it went bad.  Usually when I think red bell pepper, I immediately think of Fajitas (it's like a word association game....).  I perused the fridge and realized a Mexican feast was possible with the ingredients I had...however the meal would be neither a burrito or a fajita....so it was a BURRITA :)

Saz's Chicken Burritas
1/2 White Onion
2 Garlic Cloves
1 Red Bell Pepper
1.5 lbs of Chicken Breasts
1 tsp Red Pepper Flakes
1/2 tsp Chili Powder
1/2 tsp Paprika
1 tsp Oregano
1 tbsp. Parsley
Burrito Tortillas
Garnishes (I used tomatoes, sour cream and cheddar cheese)


> Chop up your onion, red bell pepper, garlic and parsley.


 >Cut up your chicken into small bite-sized pieces.


 > In a skillet, heat up about 1-2 tbsp of Olive Oil and once hot, add in your red pepper flakes.  Cook for about 2 minutes (don't let them burn, just let them pop a little).


 > Then add in your onion, red bell pepper, garlic and parsley.


 > Let this mixture cook for about 5 minute and then add in the paprika, oregano, and chili powder.


 > Cook this mixture down until the onions are translucent and the bell peppers are nice and soft...


> Once it's cooked down - add in your chicken and cook until the chicken is fully cooked through.


 > Now it's time for the assembly! The fun part! You can garnish these with anything from beans to guacamole to cheese -- I chose tomatoes, cheddar cheese and sour cream because it was what I had in the fridge


These are hands down, the BEST burrito tortillas ever!
