For the past few weeks, I have been on a quest to re-create the best burrito I've ever had, from the "Endless Summer" taco truck in Williamsburg, Brooklyn. This burrito is actually a vegan burrito made from seitan (which is next to impossible to find in a supermarket) so my quest took longer than expected to complete. FINALLY, one fateful day at Whole Foods, I found my seitan and was ready to get my burrito on. Although I completely deviated from the actual ingredients used alongside the seitan burrito from the taco truck, I made mine super healthy, with a spicy kick.
Saz's Seitan Burritos
For the Seasoning:
2 tsp Chipotle Chili Powder (use less if you don't want it too spicy)
4 tsp Paprika
2 tsp Brown Sugar
1/2 tsp Cumin
1/2 tsp Coriander
1 tsp Oregano
1 tbsp Cilantro
1/4 tsp Salt
For the Filling:
1 tbsp Lime Juice
1 Onion
1 Green Pepper
1 lb Chicken Style Seitan
3 Garlic Cloves
1/4 cup Chicken Stock
Tomato
Red Cabbage
Sour Cream
Burrito Tortillas> Chop up your Onion, Pepper, and Garlic.
> Prepare your seasoning and set aside.
I used fresh cilantro because I think it's so much more flavorful than dried cilantro.
> In a large skillet, heat up about a tablespoon of Olive Oil, add in your Onion and cook for about 10 minutes, or until translucent. Add in your garlic and pepper and cook for another 5 minutes. *Stir often on a medium heat so as not to burn any of the onions!
> Add in your seitan (you will need to drain out the liquid that it's packaged in). Also, you can now add in your seasoning, lime juice and chicken stock.
> While this is cooking on a medium heat, drain your beans, and then add them into the mix as well.
> While this mixture is cooking, you can chop up some red cabbage and tomato to have for the garnish in your burritos.
> I let the seitan/veggie/bean mix cook for at least 10-15 minutes...once it's done you're ready to assemble your burritos! I garnished mine with sour cream, red cabbage, and tomato. Then I added my seitan filling....
This recipe made more than enough for 4 burritos. As I said, this recipe does have a spicy kick to it (which I happen to love), but if you're not a huge fan of spice, don't add as much Chipotle Chili Powder to the seasoning mix. This recipe is not only healthy, but it was packed with incredible flavor....and you don't even realize that there's no meat! ENJOY! :)
