Cheddar Bacon Chive Scones


 For Father's Day I found this great recipe for Cheddar Bacon Chive Scones (insert mouth watering here).  They're simple to make and incredibly delicious! Last night we were invited to our friend's house for a BBQ and I thought this would be such a great side dish to bring over! They were a huge hit so now I shall share it with the world!

 Cheddar Bacon Chive Scones
  • 2 cups All-purpose Flour
  • 1 teaspoon Salt
  • 1 Tablespoon Baking Powder
  • 2 Tablespoons Sugar
  • 4 Tablespoons Very Cold Butter, Cubed
  • 1 cup Freshly Grated Cheddar Cheese
  • ⅓ cups Chives, Chopped
  • 12 slices Bacon, Cooked And Crumbled
  • ¾ cups Cream

> First, cook your bacon in a skillet until it's nice an crispy.  Once it's cooled down, crumble all the bacon and set aside.


 > In a large bowl mix the flour, salt, baking powder and sugar together.  Cube up your cold butter and add that to the bowl.  With your hands just incorporate the butter -- it will be crumbly and chunky and that's exactly what you want.


 > Into this bowl, you can now add your chives, shredded cheddar cheese, and bacon.  Stir so that all the ingredients are well distributed.


 > Next add your cream.  You may need to add more than stated above, but you want the dough not to be flaking, you want it so that it's moist enough to hold together.  Once your can form your dough without it crumbling, form it into a circle that's about 3/4-1inch thick.  Cut it into 8 equal pie pieces.  Bake in a preheated 425 degree oven for about 20 minutes - or until the inside is cooked through.


 This is a quick, satisfying and impressive side dish to any meal! For Father's Day I served it alongside the salad course, but last night at the BBQ, we had it right with our main course.
