Roasted Beets


BEETS! I know....kind of a random food that I think is an acquired taste, but it's definitely one of my favorites...and this dish is beyond simple. I literally don't do anything to the beets, they are completely unadulterated, plain beets, and they taste awesome! As was said in the original Heartbreak Kid, "There's no insincerity in those potatoes. There's no deceit in the cauliflower. This is a totally honest meal."

> First, cut off the leafy part of the beets, and quickly just wash off the beets.  Preheat your oven to 400 degrees.


 > Wrap your beets tightly in tin foil and place in a baking dish (they will leak so you definitely want to put them in a dish).


> I baked mine at 400 degrees for about an hour and 10 minutes -- at the 45 minute mark, you can start checking them to see how the cooking is progressing.  You want  them to be fork tender.  Take them out of the oven and carefully unwrap the foil and let them cool for a few minutes.



> Once cooled, peel off the skin - this will come right off (it's also kinda fun to do).


 > Cut them up into wedges and serve! You don't need to add anything to them! Some people may add some Olive Oil and salt and pepper, but I like mine just plain - they're delicious!


 Beets are extremely low in calories (a 2inch diameter beet is only 22 calories!) and they're delcious.  This dish is great alongside any meat dish (especially chicken or veal) and would be a great side dish at Thanksgiving!
