Being that we're entering the weekend, I thought I'd share a great recipe for something to make on a Saturday or Sunday for brunch: Lemon Poppy Seed Muffins! I am usually not a huge muffin fan, but ever since I was a kid, I've loved these muffins - they're not overly sweet, and the subtle taste of lemon is so delicious! This recipe yields a perfect dozen which is great for figuring out how many muffins you want to make....I mean in our house there is only 2 of us, so I'd half this recipe to make the right amount for us!
Lemon Lime Poppy
Seed Muffins
(yields 1 dozen muffins)
2 Cups All Purpose Flour
1 tbsp. Baking Powder
½ tsp. Baking Soda
½ tsp. Salt
1 Tablespoon Poppy Seeds
2 Eggs
1 cup Low Fat Sour Cream
½ cup granulated Sugar
2 tbsp. No Salt Butter
2 tbsp. Canola or Vegetable Oil
1 tsp. Vanilla Extract
1 tsp. Lemon Juice
½ tsp. grated Lime Zest

In a large bowl, mix all ingredients together
thoroughly.

In a 12-muffin greased muffin pan, distribute
equal amounts of batter to each cup.

Bake in a preheated 400-degree oven for 15
minutes. Let cool and serve with butter.
