I have recently become uber obsessed with making nachos and Mexican food in general. Every dish is simple to make, the ingredients are cheap, and the end result is delicious and satisfying. This "recipe" (if I can even call it that) is for the world's easiest dish you'll ever cook: Chicken Quesadillas. You can make these in all different variations: with beans, tomatoes, beef instead of chicken, or anything else you may wish to add....this recipe however is simple chicken and cheese and is to die for.
Chicken Quesadillas
Chicken Breasts (preferably the thin cut kind)
Cabot Cheese (I get the 50% reduced fat kind - tastes the same and is so much healthier)
Frank's Red Hot Sauce
Chili Powder
Garlic Powder
Tortillas (burrito size, NOT taco sized)
Sour Cream for garnish
>Season your chicken with the garlic and chili powder on both sides
>Now you're ready to grill your chicken...I use my ever faithful George Forman grill which I've had for over 8 years and STILL insist on grilling things on....it's a Lean Mean Fat Grilling Machine and I find George Forman to be irresistibly adorable.

How simple is that??? This is a healthy version of a Mexican dish that usually costs about $15 in a restaurant!
Yoshi loves Mexican food...or any food for that matter....
