Beef Tacos


Dear old FoodSAZm...it has been a while....there's a lot going on (including a lot of cooking) but finally, I shall update you!  My most recent culinary obsession has been Mexican food.  From quesadillas, to nachos to fajitas, I love it all.  I love beans, cheese, sour cream, and tortillas....and with that, I made Sunday's dinner of Ground Beef Soft Tacos.  This recipe will yield a TON of meat for you to stuff in your favorite taco shell (I prefer the soft shells because the hard shells have a tendency of exploding everywhere except in your mouth).  You can top these incredible meat-filled tortillas with your favorite toppings -- I used refried beans, cheese, sour creams, tomatoes and some hot sauce!  So let's get cookin'!

Saz's Beef Tacos 
1 Medium Onion
1 Green Bell Pepper
1 Jalepeno
4 Garlic Cloves
3 lbs Ground Beef (I used the 80% lean)
1/2 tsp Corriander
Taco Seasoning (see below)
1 lime
Tortillas
Refried Beans
Cheddar Cheese
Sour Cream
1 Tomato or Salsa
Hot Sauce (optional)

>Usually I am not one for pre-made seasonings, however, my wonderful fiance found this incredible brand at Whole Foods called Frontera.  We first tried their fajita seasoning when making steak fajitas and we were hooked.  So this time we tried the Chipotle Garlic Taco Seasoning and it was fantastic! This one packet will be more than enough for your 3 lbs. of meat.
 >Get all of your fresh ingredients out.

 > Chop up your onion.
 >Dice up the jalapeno.

>Chop up your green bell pepper (remove seeds and white membranes).

> Dice up your garlic cloves.

>In a large skillet, cook all of your meat until there are little to no pink parts.




>In a large strainer, over your sink, strain out your cooked meat (this will remove a TON of excess fat that is completely unnecessary to consume).

>In that same skillet, add a little bit of Olive Oil and start to saute your onion, jalapeno, green bell pepper, garlic and coriander.

>Once your onion had become translucent, you can add your beef back into the skillet - stir well.


>Once it's cooked together for a few minutes -- add in your taco seasoning & juice of 1 lime and mix.  I let this cook for about 15 minutes or more -- the more you let it cook, the more the flavors will meld.

>Now it's time for the assembly! As I said - you can add any of your favorite Mexican ingredients to these to make them your own.


>I laid down a helping of refried beans, then some sour cream....

>Then a little hot sauce for an extra kick!

>Then comes the amazingly seasoned beef/onion/pepper combo....

>Add some tomatoes and cheese and you've got one amazing Mexican dish!  This recipe could easily feed 5-6 people (just make sure you get a lot of tortillas!)

Since I am getting married in roughly 109 days (but who's counting) I made this dish extra healthy by using:
Fat Free Tortillas (only 110 calories each)
Low Fat Sour Cream
50% Reduced Fat Cheddar Cheese
Fat Free Refried Beans

Usually I hate the taste of fat free foods, but between all the flavors of the meat and all the components together this dish tastes like the real deal. Hope you enjoy!! :)
