Last night's food endeavor was something I am not usually a fan of: fish. However, it is my honest belief that no matter what food it is, if you fry it, it will taste like a bite of heaven. Justin had bought us some cod, and I thought to myself....cod.....hmmm cod.....why does that sound so familiar....? DUH. Fish n' Chips! My family and I went to England for a 4 week trip when I was younger and had absolutely no desire to try interesting foods, and I literally ate Fish n' Chips for every meal I was able to. The cod is a great fish because it doesn't have that super fishy taste or smell and it allows whatever it's seasoned with, to really be the star of the show. So onto Fish n' Chips!
Fried Cod Fish
1.5 lbs of Cod Filets
3/4 cup All Purpose Flour
1 Tbsp. Parsley
1 tsp Paprika
1 tsp Dill
1/2 tsp Chili Powder
1 tsp Old Bay Seasoning
1 egg
1 tsp low sodium Soy Sauce
Canola Oil for frying
> My cod came in 4 large filets, so I cut each filet into 4's giving me 16 Fish Stick-like pieces.
> In a small bowl, whisk your egg and 1 tsp of soy sauce together (the soy sauce is just to give the seasoning a little bit of a salty flavor).
> On a plate, combine your flour, paprika, dill, chili powder, Old Bay, and parsley and mix together.
>Take your fish pieces one by one and dip in your egg/soy sauce mixture to soak completely, Then dredge in the flour mixture and set aside on a new plate.
>In a large skillet heat up a little bit of canola oil (just enough to lightly coat the bottom of the pan). Place your fish in the heated oil and cook for about 7 minutes (flipping over every so often to cook through both sides) -- The amount of time you wind up cooking each fish strip depends on the thickness of the fish and the heat at which you keep your oil at... to make sure the fish is cooked through, you can cut into it to make sure.
> On a plate lined with paper towel, set the cooked fish on top (the paper towel soaks up any excess oil from the fish during the frying process).
I served my fish with ketchup and mayonnaise - but you can use tarter sauce, cocktail sauce or any sauce you may like! I served these with chips (aka french fries) which you can find the recipe for here! So when in doubt about a certain food group...FRY IT! :)
