Homemade Potato Chips!

If you're anything like me and hate greasy, overly salted potato chips that you get in a bag, then you will thank me for this blog post.  I love love love LOVE anything potato related; fries, baked potatoes, gnocchi, mashed potatoes, latkes, chips etc etc you get the point.  So, in registering for our wedding, I decided a Mandolin needed to be on there.  A Mandolin (shown below) is that awesome contraption that cuts things, like potatoes, into equally thick slices (perfect for making your on potato chips).

All you need for potato chips are: Potatoes, Cooking Spray and Garlic Salt.  You can season these chips with whatever seasoning you want, from Paprika, to Cayenne, but I chose garlic salt to just add a slight flavoring to the chips - nothing too intense!

Preheat your oven to 450 degrees.  Slice up you potatoes with the mandolin (I did them about 1/8 inch thick.  Spray a baking sheet with cooking spray, lay down your potato slices.  Spray the cooking spray on top of your potatoes (you can use Olive Oil, but I have Canola spray and wanted to keep these low-cal).  Then sprinkle with your garlic salt.

Cook in the oven for 10 minutes, take them out and turn them all over, bake for another 8 minutes (or until they've reached the desired brown crispiness that you like!

They're cheap, healthy, and can be served with anything! I served mine with ketchup and mayo (ketchup for Justin, mayo for me!) You can also serve them with sour cream or BBQ sauce :)
Enjoy!
