I am pleased to present a blog post for a dish made by my husband, Justin. He made these a while back, and I totally forgot to showcase his talents on FoodSAZm... so here it is! This is a great dish to serve for really any course - appetizer, a side note on an entree dish, or as a part of your dessert course. The mix of the sweet figs with the salt of the Gorgonzola Cheese and the acidity of the reduced Balsamic, will have your taste buds singing. Justin dusted the tops of these with Porcini Powder which is something we found in our local Whole Foods, but if you can't find it, just leave it off....the other 3 ingredients really just speak for themselves!
Gorgonzola Stuffed Figs
Whole
Figs, ends chopped off and hollowed out
Gorgonzola
Cheese
Porcini
Powder
Balsamic
Vinegar
1.
Stuff the figs with a cube of Gorgonzola
cheese. Dust the tops with Porcini
Powder.
2.
In a small saucepan, reduce down your Balsamic Vinegar
until it’s a thick consistency. Drizzle
on top.
