Zucchini Crisps



With the Superbowl only 6 days away I realize that sometimes the women who are forced to watch the Superbowl with their husbands/boyfriends/man friends/etc don't want to indulge in the crazy fried Buffalo Wings or 5 layer nacho dips.....I personally don't understand these women, but I hold no judgement.  So for something a little more on the healthy side against potato chips or nachos, I have these delicious Zucchini Crisps that you can try out!  They go great with Tzatziki Sauce, Sour Cream, or Tartar Sauce.  They're easy to make, super cheap, and healthy! The guys even like them too :)


Zucchini Crisps
(yields about 40 chips)

1 Zucchini, cut ¼ inch thick chips
1 tbsp. Olive Oil
3 tbsp. PANKO
3 tbsp. Pecorino Romano
1 tsp. Thyme
Pepper

1.    With a mandolin or knife, cut up your zucchini into ¼ inch thick chips.
2.    In a large bowl toss the zucchini with the Olive Oil until all chips are coated.
3.    In a small bowl, mix together the Panko, Pecorino Romano, Thyme and Pepper.
4. On a greased cookie sheet, lay out each chip individually.  Spoon some of the Panko/cheese mixture onto each chip.
5.    In a 375 degree preheated oven cook for 30 minutes.
